Quick + Healthy Breakfast Bowl Recipe

I recently asked you guys on Instagram stories what you wanted more of and I had an overwhelming amount of people ask me to share more of my recipes and snacks.

I love sharing the day-to-day of what I’m eating, but I tend to shy away from full on recipes because let’s be honest, IĀ  just make it up as I go.

There’s something about following every single word of a recipe that I just don’t like. I’ll blame it on having a short attention span, and maybe a lack of time haha, I really just prefer throwing a mix of ingredients together and hoping for the best. It’s way more fun that way.

This “recipe” (using the term lightly) is one of my very favorites in the morning. It totally hits the spot in the morning as my breakfast, but It’s also a great mid-day snack.

This is a super versatile meal because you can easily adjust the portion size based on what you need. It’s easy to whip up for one, but would also be a great addition when entertaining because you are completely in control of how much or how little you want to add.

When it comes to the nuts and toppings, I just kind of throw in whatever sounds good. You can tweak the rations based on your personal preference!

What you’ll need.

1 Apple (or peach)

2 Dates

Pistachios

Walnuts

Coconut

1 Lemon

Cinnamon

How to Make it.

Cut up your apple (or peach), dice the two dates and throw all of it in a bowl. Then sprinkle in the pistachios, walnuts, and shredded coconut all on top. Once you’ve got everything in the bowl, top it with a dash of cinnamon and lemon. Sneak a taste after a squeeze of lemon and add more as you wish!
