Yes, you read that correctly, healthy pancakes! If those two words together don’t excite you…I really don’t know what will! My brother made these and called me last week to tell me try them and boy am I glad he did. They are SO delicious, healthy and ridiculously easy to make.
What you’ll need
- 1 banana
- 1 egg
Step 1
Mash a banana in a bowl, make sure to get it as mashed up as possible! The less texture the better.
Step 2
Crack one egg into the bowl.
Step 3
Mix the banana and egg together really well, until the consistency is as smooth as possible.
Step 4
Treat the mixture like pancake batter – Pour 1/4 cup into a pan (lightly coat with cooking spray, butter or coconut oil), watch and flip like you would with pancakes.
How easy is that?! You can bet these will defiantly be on repeat in our house 🙂
