Alex and I were in Cali for a wedding this past weekend. The hotel {also the venue}, was so beautiful! It looked like a castle. We seriously felt like we were in another country…and don’t even get me started on the food. The ‘brunch buffet”, should be renamed the “brunch heaven”. I meannn, it was amazing. They had everything from crab legs and eggs bennie, to chocolate covered strawberries and a whole table of mini deserts. I posted a few pictures on instagram, so if you follow me you probably saw a few of these, but I wanted to share them with you guys! We spent quality time with great friends, enjoyed a gorgeous wedding and needless to say, we indulged above and beyond our normal eating habits. Which leads to me the kale chip part of this post… 🙂
I’m a snacker. I’m always snacking on something and as of late, I have really been loving me so kale chips. They are healthy, satisfying, and super easy to make…what more could you need from a snack?! We ate them last night as one of our sides so I thought it would be the perfect time to share.
What you need
- Kale
- Olive Oil
- Salt/Pepper
- Baking sheet
Instructions
- Wash kale and remove is from the spine (the stalk)
- Place the kale of a baking sheet and toss it with a little bit of olive oil
- Sprinkle with salt and pepper
- Set the over to 425 and cook for 12-15 minutes . The time will vary a little depending on the strength of your oven, so peek in at the 12 minute mark and see how those babies are looking!
